For optimal results, sow parsnip seeds directly outdoors from mid-spring to early summer, as soon as the soil is workable. It is important to avoid sowing in cold or wet conditions. Choose a sunny location with stone-free, well-prepared soil that has been deeply cultivated. Parsnips thrive in fertile, light, and well-drained soil. Sow the seeds thinly at a depth of 2cm in drills spaced 30cm apart. Keep in mind that germination is slow and can take up to 28 days. Once the seedlings are large enough to manage, thin them out to 7cm apart, or 10cm apart for larger roots. Ensure to water adequately to promote germination, but reduce watering to a necessary level to keep the soil moist once germination occurs. Maintain weed-free beds at all times. Parsnips can be harvested from late autumn through January, and their flavour is enhanced when left in the ground until exposed to frost. Alternatively, for storage, lift and store the roots in boxes filled with barely moist soil, peat, or sand in a cool location, where they can be kept for up to four months. Loosen soil around the roots with a fork to prevent damage before lifting.
