  • 400g potatoes
  • 400g cabbage
  • 2 medium leeks
  • 100g butter
  • 200ml milk
  • Salt and pepper to season


1. In a large saucepan boil the potatoes until tender. Remove the potatoes from the pan and place to one side. Using the same water add the shredded cabbage and boil for 5 minutes until tender. Drain and place to one side.

2. Place the sliced leeks into a saucepan, cover with milk and simmer until soft.

3. Mash the potatoes with the butter, stir in the cabbage (keep some aside to garnish), cooked leeks and milk and season to taste.

4. Garnish with shredded cabbage.
