Chocolate brownies



  • 100g butter, chopped
  • 200g dark chocolate, chopped
  • 4 medium eggs
  • 250g caster sugar
  • 100g plain flour, sieved
  • 1 tsp baking powder
  • 30g cocoa, sieved
  • 50g small fudge pieces


1. Preheat the oven to 180°C.

2. Line a 22cm tin with baking parchment.

3. Place the butter and chocolate into a heatproof bowl and place this over a pan of gently simmering water until melted, making sure that the water does not touch the bottom of the bowl. Once melted set to one side and allow to cool to room temperature.

4. Whisk the eggs and sugar together until pale and doubled in size, then fold in the cooled chocolate mixture. Finally use a spatula or large metal spoon to fold in the flour, baking powder and coco powder.

5. Pour the mixture into the prepared tin, then scatter over the fudge pieces. Place the brownies into the oven and bake for 25-30 minutes. You want them to be just set in the middle. Remove from the oven and leave to cool completely before removing from the tin and cutting.
