Chocolate & peanut butter cookies



  • 75g salted butter, softened
  • 50g crunchy peanut butter
  • 225g dark brown sugar
  • 1 tbsp golden syrup
  • 1 large egg
  • 175g plain flour
  • 2 tbsp cocoa
  • 1 tsp bicarbonate of soda
  • 100g salted peanuts
  • 75g dark chocolate chips


1. In a large bowl, mix together the butter, peanut butter, sugar and golden syrup until smooth - this is made a little easier if the peanut butter and butter are at room temperature.

2. Once smooth beat in the egg. Mix everything together until the egg is combined before stirring in the flour, cocoa and bicarbonate of soda. Mix well until you get a smooth dough then stir in the peanuts and chocolate chips.

3. Heat the oven to 180°c and line a baking tray with baking paper. Place spoonfuls of the mixture on the tray (about the size of a walnut) leaving at least a 5cm gap between each cookie as they will spread as they cook.

4. Bake in the oven for 12 minutes. They should be crispy on the outside but still soft to the touch in the middle. Remove from the oven and leave to cool or enjoy warm.
